BLUEBERRY MINT SORBET
I can't believe we are heading into one of the last warm weekends of the summer, at least it typically is here in the PNW! I have been loving sorbets so much lately, especially with these endless heat waves! Sharing the perfect, easy dessert idea for the long hot weekend ahead! Dairy free, tart, and delicious check out my Blueberry Mint Sorbet below!
BLUEBERRY MINT SORBET
Ingredients
- 2 1/2 cups frozen blueberries
- 1/3 cup raw sugar (helps with texture)
- 1 small handful of fresh mint
- 1/2 - 1 lemon (depending on tartness preference)
- 1/4 cup water
Instructions
1. Add frozen berries, sugar, lemon, fresh mint, and water into a blender ( I use my Vitamix). Blend well, you may need to add a little bit more water start with less and add as needed trying to keep the mixture as thick as possible!
2. Once the mixture is smooth pour into a glass container ( I use a rectangle pyrex dish) spread evenly and place on a flat surface in freezer for at least 3 hours or overnight if possible!
